Welcome to Recipe Central!
Our goal is to provide three day's worth of nutritious food items for our clients upon their visit to the South Hall Community Food Pantry. We thought it would be fun and engaging for an entire on-line community to review the list of food items we commonly provide and generate a recipe section for those food items.

Chicken-Noodle Casserole

Makes: 8 servings INGREDIENTS: 4 stalks celery, chopped 1 medium onion, chopped 1 tablespoon vegetable oil 2 pounds chicken legs or thighs 1/2 teaspoon ground black pepper 1 teaspoon dried thyme, crushed 1/2 teaspoon salt 1 slice bread 1 12oz. package extra large noodles 1 8oz. container sour cream dip 2 tablespoons all-purpose flour Non-stick cooking spray 2 tablespoons fresh parsley DIRECTIONS: 1. Preheat oven to 375 degrees. In a dutch oven, cook two-thirds of the celery and two-thirds of the onion in hot oil over medium heat for 3 minutes. Add chicken, pepper, thyme, and salt; cook for 2 minutes. Add 6 cups of water. Bring to boiling; reduce heat. Simmer, covered for 20-25 minutes until chicken is no longer pink. 2. For topping, tear bread into small pieces. Finely chop remaining celery and onion. In a small bowl, toss together the bread, celery, and onion. Set aside. 3. With a slotted spoon, transfer noodles, celery, and onion to a 3-quart baking dish. 4. For sauce, in a bowl, whisk together sour cream dip and flour. Gradually whisk in 1 cup of the hot broth until smooth. Add sauce to broth in dutch oven; cook and stir until boiling. 5. Discard skin and bones from chicken. Chop chicken, then add noodles in dish. Gently stir in sauce. Sprinkle with bread mixture topping, then lightly coat with cooking spray. 6. Bake uncovered for 30-35 minutes until topping begins to brown. Top with parsley just before serving. Celebrating Family Traditions!

I grew up in a household of six people and we had to stretch a budget pretty far. This was one of my mom's favorite recipes and there was never anything left in the dish. I still make it for special guests today and I usually double the recipe. Enjoy! INGREDIENTS: 3 cups cooked, mashed sweet potatoes 1 cup sugar 2 eggs 1 tablespoon vanilla 1/2 cup butter TOPPING: 1 cup brown sugar, packed 1/3 cup of flour 1 cup chopped pecans 1/3 cup butter DIRECTIONS FOR INGREDIENTS: Combine potatoes, sugar, eggs, vanilla, and butter. Beat with electric mixer for 2 minutes and pour into buttered casserole dish. DIRECTIONS FOR TOPPING: Mix topping ingredients with fork and sprinkle on top of potatoes. Bake in a 350 degree oven for 30 minutes. Serves 4. BEST STRAWBERRY PIE
Mom's strawberry pie was an all-time favorite when berries were on sale. Easy to make and wonderful to eat. Even better to fight your brothers over the size of the slice. Enjoy! INGREDIENTS: 1 pie shell (9") baked 2 cups fresh strawberries, crushed 3 tablespoons cornstarch 3/4 cup sugar 2 tablespoons lemon juice 2 cups whole or halved strawberries. DIRECTIONS: In a saucepan, combine 2 cups fresh crushed strawberries, cornstarch, and sugar. Cook, stirring constantly, until mixture boils. Boil 2 minutes. Cool slightly and fold in lemon juice and 2 cups halved strawberries. Pour into crust. Chill two hours. top with whipped cream when ready to serve. Serves 6 people. NAN'S APPLE MUFFINS
This recipe has actually been handed down through four generations of our family. We were always sworn to secrecy and I can't think of a better cause to break the secrecy for than the Food Pantry. I suspect it has actually been shared by family before because folks always ask for it. I hope you enjoy it as much as we have. INGREDIENTS: Note: do not substitute ingredients. It never, ever works out when you do. 1/2 cup sugar 1 egg, well-beaten 4 tablespoons melted real butter 2 cups flour 4 teaspoons baking powder 1/2 teaspoon salt 1 cup whole milk 1 cup chopped apples DIRECTIONS: Sift flour, baking powder and salt. Beat egg, add sugar and melted butter. Add sifted ingredients to egg, butter, sugar mixture alternately with whole milk. Add apples to the mixture last. Fill muffin tins half full. Top with a mixture of cinnamon and sugar. Bake 20 minutes in a 400 degree oven. Serve piping hot. Recipes with love, from the Food Pantry!
